Alex Atala
Alex Atala's work with Brazilian ingredients, colors and flavors has turned attention of the food specialists since the beginning of his career. His national and international award collection is vast and in 2013 he was chosen as one of Time 100 Most Influential People in the world. His main restaurant, D.O.M., joined the exclusive group of Brazilian restaurants that holds two Michelin stars. In 2014 Atala received the Lifetime Achievement award of the South American edition of the same magazine. The chef also conceived the ATÁ Institute, which core mission is to bring knowledge closer to eating, eating closer to cooking, cooking closer to farming and farming closer to the environment. The institute was founded in 2013 and consists of a multidisciplinary team with photographers, businessmen, admen, an anthropologist and a journalist. Held annually, the FRU.TO seminar is the practical experience of what the ATÁ Institute represents and the ideals that chef Alex Atala has always believed in. The lecture is a result of a partnership between Alex and the cultural producer Felipe Ribenboim and gather experts in the fields of sustainability, science, gastronomy and food industry to discuss an alternative to a more sustainable future in every sense. Above all things, the topic that guides FRU.TO is one that should worry every one of us: how can we provide adequate food to a population that will reach 8.6 billion people in 2030 according to the UN? Besides D.O.M, Atala also partnered with two other restaurants: Dalva e Dito, specialized in emotional Brazilian cuisine and Bio – Comer Saudável, which aims the effective utilization of ingredients and consumption awareness.
